On Saturday, February 26th, 2011- Eggwhites Special Event Catering was privileged to be a part of the Food Network South Beach Wine and Food Festival. To celebrate both our 10th year participating and the 10th year Anniversary of the Festival itself, Chef Gary Lampner created our new chic and innovative hors’ d’oeuvre — the “Egg Cone”.

The “Egg Cone” is composed of a savory cone topped with a Quail Egg and Wasabi Tobiko Caviar infused Creme Fraiche. The “Egg Cone” was both stunning in appearance and flavor, and was certainly a favorite at the Festival.
The Food Network South Beach Wine and Food Festival is one of the largest and most highly esteemed food festivals in the country. They celebrated this huge milestone along with a long list of celebrity chefs including Bobby Flay, Rachel Ray, Giada DeLaurentis, and Guy Ferri to name a few.

As always, the Festival was a great success with over 4,000 attendees and a day full of incredible wine and food!

Willow and Michael Hoffman were married at the historic Venetian Pool on May 22, 2010, and Eggwhites had a wonderful time planning their unique wedding with them. Our Culinary team worked with Michael and Willow to create a “farm to fork” menu tailored to their green and vegan lifestyle.
The program was designed to pair the natural aesthetics of the Pool with the purity of the raw foods and completely natural ingredients making up their menu.
Upon arrival, the Bride and Groom and their 160 guests enjoyed the tranquil beauty of the Venetian Pool as they sipped freshly made Chilled Cucumber Mint and Lime Juice and Lightly Spiced Carrot Juice “cocktails”.
The heartfelt ceremony was held over the free-form coral rock lagoon with the 25 foot cascading waterfall in the background.
While mingling by the emerald green waters of the Pool, family and friends were served a variety of vegetarian hors-d’oeuvres including Tapenade-Stuffed Shitake Mushroom Caps, Falafel, and mini Greek Spanikopitas.
Guests were then welcomed into the whimsically decorated dining area where they were introduced to the specialized culinary stations featuring locally and organically grown ingredients.
Guests began their meal with a Salad of mixed greens, beets, mushrooms, purple cabbage, carrots, scallions and cucumber, topped with a choice of Coconut Lime or Citrus Garlic dressing.
Chilled Siamese Dream Thai Curry Soup or Andalusian Gazpacho provided for a cool and refreshing transition to the main course.
The main dining stations included gourmet raw “Pasta” made of Zucchini, Parsnip, Daikon and Yellow Squash, tossed by our Chef in either a vegan “Alfredo” sauce prepared from Brazil Nuts or Raw Marinara. Chefs also prepared a tasty Pan Asian Stir Fry with a selection of shrimp, straw mushrooms, snow peas, broccoli, bamboo shoots, red peppers, baby corn, and much more.
A beautiful and delicious three-tiered Vegan Carrot Wedding Cake sealed the couple’s most special evening with sweetness. Our Chefs greatly enjoyed utilizing their culinary talents to create Michael and Willow’s first meal together as husband and wife! Jill and Geoff were married at the Josephine Leiser Opera Center on July 11, 2009 and Eggwhites had a great time planning their wedding with them.
The bride and groom opted for a low key affair, celebrating their union with an informal party rather than a formal affair. The décor was white and ivory and the table scapes consisted of varying size candles and gerber daises.
After the heartfelt ceremony, the guests were invited to the downstairs lounge to enjoy cocktail hour where they sampled tasty offerings such as Baby Lamb Chops with Minted Ginger Preserves, while the Eggwhites staff transformed the ballroom from the structured ceremony area to an extraordinary reception and dining room.
As the bride and groom informally entered the room, (they chose against a formal introduction) guests were already visitng the amazing dinner stations.
From a traditional Italian Antipasto Station to a cook to order Pasta Station, the guests had an array of menu items to choose from.
The chocolate iced wedding cake was a big hit as well.
We wish Jill and Geoff a lifetime of happiness together!

Kate and Larry’s Wedding at The Bonnet House in Fort Lauderdale
We started the New Year off with Katie and Larry’s amazing wedding at the Bonnet House. As Katie is a big fan of yellow, the entire affair was designed in silver, yellow and white hues. The dining tables featured canary yellow linens with daffodil yellow organza overlays. The magnificent centerpieces were designed with yellow roses, white hydrangea and cymbidium orchids.
The tall crystal candle holders on the tables were to die for! The draping and lighting were spectacular from the spotlights on the pond to the couple’s monogram that illuminated the dance floor all night. The transparent tent topped off the décor and the guests enjoyed the majestic foliage and ambiance of the Bonnet House. At cocktail hour, the guests enjoyed an array of delicious hors d’oeuvres including seared tuna carpaccio and double cream brie in puff pastry, while enjoying the quaint setting of the Bonnet House’s cozy courtyard. For dinner, the guests enjoyed a served salad of field greens with montrachet goat cheese, hearts of palm, and pomegranate seeds. The guests then made their way to the stations which included a raw bar featuring fresh stone crabs, jumbo shrimp cocktail, a carving station featuring rosemary roasted rack of lamb and papaya-mango glazed pork loin. Also featured were two more chef manned action stations; a pan Asian stir fry station and a gourmet pasta station.
The classic Sidecar was Katie and Larry’s signature cocktail, a nod to the bride’s late father’s favorite drink. Nations Band rocked the house all night and of course at midnight played the traditional New Years fare. The guests continued to dance and party the night away until the wee hours of the morning. Everyone had an amazing time!
